Captain: Jeffrey “Inki” Fitting

Nationality: USA/NZ

Captain Inki (Jeffrey Fitting) is an adventurous sort born in the United States who normally resides in Te Wai Pounamu of Aotearoa. He regularly spends time away from sailing exploring the Amazon jungle where he works and lives in remote villages with indigenous peoples. Otherwise, you’ll find him climbing the Andes and Southern Alps, wandering amongst their majestic peaks. A well-seasoned traveller, he’s travelled throughout the South Pacific, Southeast Asia, South America and Europe.

An ocean-going voyager through and through, he has crossed somewhere between 20,000-30,000 nautical miles of the deep blue. Much of his seamanship has been made through long passages to and from remote islands nestled within the Pacific Ocean. He currently holds a USCG Master’s Near Coastal license rated at 50-tons with auxiliary sail as well as assistance towing endorsements. A PADI Rescue and Advanced Open Water Diver, he loves to spend time beneath the surface whether it be to admire coral or hunt for his next meal.

When he’s not under the surface of the waters, you’ll find learning how to wing foil. A sport which obtains healthy inspiration from the recent exploits of the modern sailing community, demonstrated during the past few America’s Cup contests as well as the Sail GP circuit. If you are not able to catch him attempting to float above the sea, you’ll find him wandering remote paths across the mountainous islands he frequents.
There’s nothing he enjoys more than being able to share a patch of paradise with others. Whether it be as a hiking guide in the mountains, a conservationist protecting critically endangered species or sailing upon warm tropical waters there’s surely an adventure to be had and a few yarns to be spun.

Chef Jessi Meyer

Beyond taking life less-than-serious, Jessi enjoys any pursuit that keeps her active and outdoors. Growing up in a rural town in northern Kentucky, Jessi’s childhood was basked in open-air exploration, and boating on lakes and rivers. She discovered the big mountains and deep seas when we she moved to New Zealand in 2016 with Captain Inki. Jessi holds a degree in Environmental and Sustainability. Moving through life with an ecological perspective is what led her to a life of sailing. Although it was also, undoubtedly, influenced by a charming captain. Jessi and Inki have shared sailing experiences in the Caribbean and the South Pacific. Recently, they helped restore a 75-year-old schooner and operated day charters in Maine.

Jessi is keen on quick wit, preferring to dance though life. However, she holds a high standard when it comes to safety. Jessi is certified in CPR and first aid with emphasis in wilderness first aid. Jessi has worked as a nature-connection mentor with children, a hiking guide throughout the South Island of New Zealand and was a conservation officer in the Southern Alps. When she is not taking people to spectacular places, she enjoys making pottery, foraging wild foods and medicines, writing, and plucking around on her new banjo.

Jessi’s love for food began at a young age, always involving herself with the responsibility of sous chef. Inheriting her families love for shared dinners and delicious food, Jessi has worked in kitchens learning from professional chefs to self-taught foodies and nutritionist. Jessi holds a special interest in local, nutrient dense wholefoods. She is more than happy to work with specialized diets and has a wealth of experience meeting the needs of those who are gluten-intolerant.

We are just back from a week aboard the Easir II with Jessi and Inki. This was planned as a once in a lifetime trip and the worst part of the trip is I want to go again and again!

The boat: Perfect fit for our family of four! The boat was our home away from home and it was well stocked, easy to live in and perfect for star gazing, ocean swimming and night time card playing!

The trip: We primarily traveled the coves of St. John. The water was beautiful, full of sea life and the island offered a variety of experiences from Coves with sandy beaches and a dozen other yachts to coves with a dozen turtles and very few other people. All and all St.John was a swimmer's paradise.

The crew: I couldn't imagine this trip without Jessi and Inki. They became part of the family right from the start! It felt like we were visiting old friends who were showing us around their new home. We shared with Inki that we hoped to hike while we visited and he made sure that he had scoped out hikes to ruins and beaches that would add to our trip. Jessi's meals were incredible - she accommodated our need for gluten free with ease and inspired us to up our cooking game at home with each meal she made! The two of them together were just a delight - we especially loved their bond with our kids and their active participation in family game nights as well as going the extra mile to make this an Easter to remember.

All and all this was a 20/10 trip ❤️

We thoroughly enjoyed our sailing trip in the USVI with Captain Inki at the helm and Jessi as our wonderful chef and first mate. They make a great pair and provided an excellent experience before (with introductory emails and optional zoom meetings) , during ( the full service of island and boat life) and after (asking for feedback and assuring all expectations were met) our voyage aboard Easir II. The boat was well maintained, clean and tastefully decorated. We felt welcome and very comfortable with their knowledge of the islands and sailing experience. Our favorite area/activities include snorkeling at Buck Island and Christmas Cove, Paddle In Tiki Bar at Maho Cove, Hiking at Little Lameshur Bay and the whole St. Croix experience of true sailing, exploring the island with a rental car ( not so much driving on the opposite side of the road – lol) , seeing Point Udoll, the botanical gardens, a little shopping and history in Christiansted, roadside BBQ and a fun afternoon spent in Frederiksted. We visited the outdoor market, happy hour bars and indulged in Alfredo’s special Ma ma huana drink (#alfredosauced) at Taiguey.

Our meals on board were always thoughtfully prepared by Jessi. Table set with nautical and topical themes each evening. Some highlighted dishes to mention are the mouthwatering and comforting Short Rib, a delightful Pasta Carbonara, to our surprise a very tasty Chicken Curry and delicious daily breads and pastries alongside the fresh fruit and pleasing salads.

I love that we all were able to capture fun photo moments on this voyage and traded with each other. We enjoyed the conversations and hospitality Inki and Jessi provided.

Lastly, I am so thankful for accommodating us with a nice sound system to play our requested music and the music you shared from New Zealand and other areas. The bluegrass and jazz covers and your sea shanties were awesome. We even danced a bit too long the first night. The many shades of beautiful blue water, natural beaches and serene landscapes are most unforgettable.

Our vacation on Easir II was very enjoyable! Inki and Jessi were kind and friendly and did their best to make our trip a fun one. The catamaran was always kept very clean. We truly enjoyed visiting St. Croix even though the journey was a long one. I loved the beauty of Buck Island. We both were quite excited to find new birds to add to our life list. The meat eaters loved the short rib meal - Neil said it was his favorite.

We were completely blown away by our remarkable week with Jessi and Inki. I think there is an untapped market for groups like us in our early thirties. Jessi and Inki organized the perfect itinerary full of action, adventure, and beauty. The boat was comfortable, clean, and better than we could have imagined. Our favorite day started with a snorkel, followed by lime-out tacos, and love music floating in Coral Bay. We could not have asked for a better crew to share this trip with. And it really felt that we were paired with such a wonderful couple that invited us to share in their love of life, sailing and each other.

Excellent Trip!
Having never sailed before my family chartered the Easir 2 catamaran and crew to fulfill one of my mother’s bucket list items. To be honest, I was nervous. I had no idea what we were getting into.

From the moment we stepped aboard Captain Inki and First Mate Jessi made sure we had everything we needed for an epic adventure cruising around USVI.

Captain Inki fully explained our possible mooring choices and helped us navigate our options while ensuring we always had a great spot to snorkel and swim off the boat. Jessi made excellent meals every day and took very good care of us while we were aboard and of course performed her first mate duties beautifully. This crew is capable and confident.

From snorkeling and checking out sea turtles, stingrays and all sorts of amazing fish (I swear it was like being in an aquarium at times) to hiking up and over the hills to visit petroglyphs and ruins Inki and Jessi accompanied and guided us on our epic adventures. They also ensured that we were always comfortable with a drink in hand during those lazy lounging moments.

We experienced some amazing things thanks to this fabulous crew. I ate Jessi’s beautiful yogurt parfait for breakfast while perched on the bow of the boat under sail, and every evening Inki would blend up one of his fruity rum drinks to enjoy as we looked for turtles and watched the sun set. He played all sorts of music for us while we were aboard and listening to a bit of soul music while the boat sails through some chop is somehow perfect.

Inki and Jessi were flexible and patient accommodating 3 generations of people and making sure we were all living our best lives. My mom even got up on a paddle board and snorkeled in a quiet bay.

When I asked my 11 year old daughter what she thought- she said it was the best trip ever. And she’s pretty well travelled. Highlights for her included laying out on the paddle board, snorkeling, doing some boat yoga with our crew and getting pizza delivery from a boat!

We had such a good time that by the time we got home - we were trying to figure out how much it would cost to buy a catamaran! The freedom of exploring combined with the ability to moor in quiet less developed areas is like nothing else.

Inki and Jessi did a fantastic job introducing us to the joys of sailing and we all just want to go back and explore somewhere new. With Inki and Jessi of course. My daughter wants to bring them with us everywhere. Lol

Capt. Inky led us on a fun and exciting 2 hour cruise. We had wind and rolling seas which made for some thrilling moments. He and his mate were informative about the area and we even got to sing a sea shanty! But I hear Capt. Inky is leaving for other seas. Good luck to Lazy Jack's owner at replacing him.

We spent a lovely late afternoon on the Lazy Jack. Captain Inky and 1st mate John did a fantastic job sailing this beautiful sailboat and we felt safe in their capable hands. Inky has a good sense of humor and is a good story teller on this laid back good vibe tour. It did not feel touristy and was a great way to take in the scenes of beautiful mid coast Maine.

During our road trip from Boston to Arcadia National Park we made a break at Boothbay and spontaneous decided to go on a sailing trip with Lazy Jack - one of the best decisions on our tour! The time during the sailing (2hr trip) went by so quickly. Passengers are even allowed to help to raise the rails. We thoroughly enjoyed the fresh breeze and views of the coastline. For us travelling is not only about landscapes and sights; it's about the people you meet on the way. Jessi and Capt. Inky are just wonderful, open-minded people, who made this short sailing trip a memorable one. Many thanks :)

The Hubert’s were great! Very personable and accommodating. The food was always very good and we never went hungry. The locations we went never disappointed and they were very knowledgeable of the area. The boat was great and looked brand new.

Sy and Kara delivered an exceptional first charter experience for my wife, myself, and our two children (10 and 2 years old). Our preference sheet requests were all adhered to, including a strict gluten free diet for my wife, a stop at a sports bar to watch the Cowboys Thanksgiving day football game, a traditional Thanksgiving turkey dinner with all the accoutrements, and a beach pirate treasure hunt for the children. Speaking of our children, we could not have asked for a better crew to cater to their needs, or to the needs of us weary parents who were initially worried about the possibility of having to chase our toddler in circles around the yacht rather than being able to sit back and relax and enjoy the journey. Our worries proved wholly unfounded, as Kara graciously stepped in repeatedly not only to care for our toddler while we were onboard so that we could sit back and relax, but she also generously offered (and we delightfully accepted) to care for our little one on the yacht on several instances where we wanted to do activities on shore or go diving/snorkeling toddler-free. Put simply, Kara was fantastic with both of our children, putting us greatly at ease and allowing us to get the relaxation and break we so desperately needed on this holiday vacation. As for the beach private treasure hunt that we requested for the kids, both Sy and Kara spent several days carefully planning and plotting the hunt, and executed it so amazingly well — complete with Sy donning a pirate costume and accent, and a handmade treasure map along with clues hidden along the beach, both on land and under water—that observant guests with children on other yachts were asking if they could participate! When it comes to the meals onboard Easir II, both Sy and Kara’s culinary talents were readily evident from day 1 of the charter, serving us culinary delights which quite literally had as wondering, is there some way we could afford to simply stay aboard this vessel with this crew indefinitely? My personal favorites when it came to their cuisine were their Asian-influenced dishes, such as shrimp summer rolls, a delightful seafood in homemade green curry, and a perfectly seared ahi tuna appetizer with a gluten-free soy ginger glaze, all of which seamlessly blended local fresh seafoods with scratch-made sauces and dressings. When all was said and done, all of our trepidations as first-time charterers with little ones onboard proved completely unfounded, as Sy and Kara expertly and precisely provided the magical and restful vacation for which we had hoped. We would not hesitate to sail with them again, and though we returned from our journey just yesterday, we all—especially our toddler, who refers to Kara lovingly as “Aria”—miss them already. We wish to extend our sincerest gratitude to them both!

We were so absolutely pleased with the Huberts. They were fun and we enjoyed our time with them. Not only experienced at sailing, navigating our catamaran but they were exceptional cooks with gourmet meals served every day. If we get the chance to sail again, we will definitely request the Huberts.

Amazing! More than we expected! The food was outstanding. The Huberts did a great job offering us many choices per day. Trip of a lifetime!


The boat was immaculate. The food was amazing. The options presented to us daily were all out of this world. This trip had a level of service that was better than any 5 star resort. The Huberts made our trip perfect and memorable. They were friendly, funny, great cooks and I can't wait to book our next trip.


The boat was amazing! New, clean and so well cared for. The Huberts were so accommodating, went out of their way to please us and were so enjoyable to be around. They kept the boat stocked with our favorite things and clean. The meals were amazing and delicious. I would rate them a 10 out of 10 and join them for another charter again!

Our 21 and 17 year old daughters really took to Kara and she was always up for anything, and provided great education to all of us on the history of the islands. Sy was always communicating options and giving us plenty of information so we could make the best choices.

The Hubert's were amazing right from the start. They were laid back enough to allow us to do what we wanted but take charge enough to keep us on track. We can't imagine a better curated experience.

Captain Sy made us feel completely safe. He certainly knows what he's doing at the helm. (Kara is close behind) The boat was always clean and tidy.

The food was spectacular! Every meal was better than the last. A truly decadent experience.

We would highly recommend this boat and crew. You won't regret it!

Wow! What an amazing experience! I cannot imagine taking this trip with any crew other than Sy and Kara. Sy was a a master captain, explaining every part of our trip and answering all of our logistic-related questions with ease. He remained flexible throughout and was sure to cater to all of our needs. Kara was an excellent hostess. Our hands were never empty - whether it was a refreshing water, juice, or craft cocktail, she does it all! Kara was excellent company on board while still managing to be professional and service all of our needs. Additionally, I cannot rave enough about the amazing food on our charter. Both Sy and Kara made impressive meals and I never left the table hungry. I appreciate their willingness to accommodate my somewhat limited pallet and love that I got to try so many delicious new things! I have never been so well catered to on any trip. Sy and Kara were absolutely exquisite hosts and I will recommend that everyone I know book a trip with them in the future.

This was my first charter experience. The Huberts were warm, professional, and very knowledgeable. There was not a question they did not answer and I greatly appreciate their patience and instruction with things that were new to some of us. I enjoyed the confidence and calm they exuded and I knew we were in “good hands”. I could sit back, relax and enjoy the trip. 2. Was the yacht comfortable and clean?
The yacht is brand new so it was very clean and comfortable. I don't think I saw anything that was not in perfect order, right down to the cushions.

3. Was the yacht well ventilated?
Yes the yacht was well ventilated overall, while the cats tend to have much better breeze up top and on the bow.

4. Was the food good and well presented?
Sy is a very talented chef and takes a great deal of pride in not only the food itself but its presentation.

5. Did you like the area you sailed?
Yes, in fact it was the first time I had sailed the southern side of St John due to the BVI being closed. In the past we have always cleared customs in West End Tortola and after spending the night at Norman, heading in the direction of Virgin Gorda. While we are looking forward to coming back when the BVI is open again, the southern side of St John was a real treat..

6. Additional comments on your charter?
We have enjoyed sailing in the Virgin Islands for many years. This yacht and crew may have been our favorite. Sy and Kara were a delight and take great pride in making their guests feel right at home. I'm not sure there was anything more we could have asked for.

We had the best vacation! So relaxing and easy. Sy and Kara were so enjoyable to be with. It was easy, fun, delicious and just an overall great trip! The kids loved spending time with Kara snorkeling and with Sy doing water sports. We have already referred them to several friends! Can’t wait to do it again!

Kara and Sy provided our family with an amazing family holiday experience, so much so that we all came away from the trip saying it was the best trip ever. From the first time we met the pair on a zoom call for pre charter, to the last day when we were able to take advantage of their incredible hospitality Kara and Sy were nothing short of exceptional! The boat was immaculate, and this crew took care of our every need, they entertained our 3 kids everyday with activities whilst also reaching a high standard of service which included serving up spectacular meals that met with approval from everyone! I can't recommend Sy and Kara with high enough regard, they are now part of our extended family!

Shhhhhh, don't tell anyone, the Hubert's are the best hosts and have the best charter on the USVIs. We don't want them to become so popular, they'll be booked the next time we want to go sailing. Every aspect of being on the boat with the Hubert's was a 10+. The boat was clean and thoughtfully appointed. No detail was missed. A basket of personalized snacks, fresh basil and herbs, a stocked bar, and exceptional food. They took a genuine interest in all the guests, adults and our children. Snorkeling, fishing, tubing, sub winging, card playing, board gaming were all part of the daily agenda.....all while providing three incredible meals a day - along with mid-morning and afternoon snacks. Their response to any question, need or request was always "yes" - now what was your question? Whether on the boat or in the water, I felt my children were safe and cared for at all times. We couldn't have asked for a better vacations.

The Huberts were everything we could have hoped for and more. Their enthusiasm, their knowledge, their food, their spirit and their generosity of time and attention to everyone, including the 10 and 12 year old boys, was exceptional. Though they asked repeatedly about how they could be more accommodating, they left us wanting for nothing. The entire charter was a pleasure from start to finish. I felt relaxed, safe and sated with service and sunshine. I would do it again tomorrow and recommend the Huberts highly for anyone lucky enough to spend time in their company.

But, if you are lucky enough, you may take a vacation that causes you to question your purpose...your very existence...and whether what you have been doing your entire life was even 'living' at all. For there, on the Easir II, we learned to really live. We relaxed, we adventured, we enjoyed. Sy and Kara were the perfect guides on our journey to discovery and will be lifelong friends. They taught us to swim with the creatures of the sea, fed us food meant for kings and queens, and filled our cups to overflowing with the sweetest, painkilling concoctions. And everyday since we have been home, we have considered selling all and finding our way back. This was an experience we will never forget."

"I cannot say enough about our amazing week with Captain Sy and Kara aboard the beautiful Easir 2. This was easily the best vacation of our lives. My wife and I traveled to the Caribbean many times on cruises and at all-inclusive resorts but we have never had a vacation like this. Sy and Kara were incredible hosts and all around awesome people who exceeded our expectations in every way. We had an absolute blast snorkeling, free diving, hiking, sailing, fishing, paddle boarding, knee boarding, riding the sub wing, and especially eating. This was also the perfect covid vacation since we were completely isolated from people outside of our group. We will be back very soon!"

Best snorkel trip in Key West
This was by far the best snorkel trip I've ever been on. The crew were phenomenal and went above and beyond to make everyone feel welcomed! The boat and equipment were clean and well maintained and the reef destinations were top notch!
Would absolutely recommend booking this excursion while your in the keys!
Morning snorkel
Sy was very well trained and efficient. I'm a master captain/diver for a living and appreciate a very well done charter! Would definitely book again on our next vacation. We are Tampa natives and decided to visit the Keys for a weekend.
The reef was amazing and it was the perfect way to finish our trip!
